Maple Curry Penne

Here is all peachy, the husband and I just bought one of those Endy mattresses, I hope it’ll be delivered today! (Edit: It just got here! So excited!) Have you guys tried them? We only heard good things so we’re super excited! Stay tuned for a review soon!

Onto today’s recipe, Maple Curry Penne. I must admit, that I did not create this recipe. I tried it at a local restaurant! I then attempted to re-create their dish and, while I have no idea if the ingredients are right, I’m super satisfied with my recipe. It’s also like, 1/5 of the price if you make it yourself!

It’s a super easy yet luxurious recipe, and yes, the ingredients do sound weird together, but I assure you, this is delicious!

Let’s get started!

Maple Curry Penne

(Serves 4-ish)

Ingredients

  • 1 box of penne (500g ish)
  • 2-3 cups of cooked chicken (I use both breasts and legs, but it’ll be just as delicious with breasts only)
  • 1 red bell pepper, sliced
  • 1 small onion, sliced
  • 1/4 cup of Maple Syrup
  • 1 cup of milk or cream
  • 3-4 tbsp of cream cheese
  • 3-5 tbsp of curry powder (may need to add more, you’ll have to test your sauce and adjust)
  • 1/2- 1 cup of pasta cooking water
  • 1 tbsp of butter/oil of your choice (make it somewhat neutral tasting if using oil)
  • Salt & Pepper

How to

  1. Boil water for your penne
  2. Slice the bell peppers and the onions
  3. Add penne to the boiling water
  4. Add butter or oil to a pan and saute the veggies
  5. Add the chicken to the veggies
  6. Add the cream cheese and the curry powder, make sure to use medium heat to melt the cream cheese without burning.
  7. Add the maple syrup and the milk/cream
  8. Scoop up 1/2 of pasta water and add it to the sauce, drain the pasta and reserve. The penne should be almost done but not quite.
  9. Season the sauce with salt and pepper, taste it and adjust the curry powder and maple syrup if needed.
  10. Once your sauce has thickened a little bit, add the penne.
  11. Finish cooking the penne in the sauce, make sure they’re well coated.
  12. EAT ALL THE PENNE!

Voila! Simple yet fabulous, even my husband likes it, and he’s usually a ‘noodles-with-butter’ kinda guy when it comes to pasta.

Note that this is not a low-calorie recipe at all, keep it for a night when you won’t mind indulging a bit. I tried a few recipes where I substituted ingredients to make it less rich, it’s not nearly as good. So, just be aware that this recipe will clock a little over 800 calories per portion with fairly high carbs and fairly high fat. Totally worth it though!

You can replace the chicken by chickpeas for a vegetarian version, I never tried replacing all the dairy for a vegan recipe, so if you try, let me know what you used and how it went!

Greek Lentil Salad

Hey everyone!

How’s life? Here it’s pretty busy! I started to work on a special project for the blog, hopefully, I’ll be able to make that happen quickly and share it with you guys!

It’s still a little coldish around here, but I decided that it was summer already. So I broke out the dresses, the BBQ, etc. I’ll be cold, but happy.

In this line of thought, I made a salad that goes great with most BBQ recipes, but mostly chicken marinated in yogurt (Find a recipe HERE).

Even better, this protein-packed recipe shall satisfy that vegetarian friend of yours, or your little sister who recently converted (Ya, you Laurence!) 

So here goes:

Greek Lentil Salad

Lentils are probably my favorite legume, they’re not super hard like chickpeas, mild in flavor, super versatile, and full of proteins! And they are CHEAP! My favorite word of all words! This recipe fed 3 as a main meal for less than $3 per portion, I call that a win!

Plus, this is very much a cut and chuck recipe. Cut all the ingredients, chuck in a bowl, add the vinaigrette and done! Fast, cheap, healthy… what more could you possibly want?

 

Greek Lentil Salad

Serves 3-4

 

Ingredients

  • 1 large can (540ml) of cooked lentils
  • 1 container (2-3 cups) of cherry tomatoes (I got the mixed colors cuz they pretty!)
  • 1/2-1 cup of feta cheese in small cubes
  • 1 cup of black olives (I buy the sliced ones because I have no patience to cut olives…)
  • A handful of fresh parsley
  • Your favorite vinaigrette (the one I used was 2 parts olive oil for 1 part lemon juice with a little bit of dijon mustard, salt, and pepper. But you can use a pre-made Greek vinaigrette or Italian would probably be fine as well)

How to

 

  1. Cut the veggies and cheese to be bite-size
  2. Drain and rinse the lentils for a few minutes to get rid of the sticky liquid
  3. Prepare the vinaigrette by mixing 2 parts of olive oil with 1 part of lemon juice, mix with salt, pepper, and a bit of dijon mustard.
  4. Or use a store-bought vinaigrette, it’s your salad, you do you!
  5. Chuck everything in a bowl and mix well.
  6. Sprinkle with fresh parsley
  7. EAT ALL THE SALAD!

Yeah, basically, you don’t even need a real recipe for this, easiest yet most filling salad!

Pictured above was my lunch that I brought to work, do you see those carrot chips?? A revelation! Chips and dips, but healthy! And still satisfying because of the actual crunch! I literally bought them like that but you could just like, slice carrot, with the same effect!

This recipe is also vegetarian, gluten friendly, and will ring you about 600 calories per serving (as a meal, not as a side) according to a website that calculated the calories per serving… not sure quite how accurate it is.

Wishtrend box review

Hi everyone!

For those of you following me on Instagram, you’ll know that I ordered a Wishtrend box, curated by one of my favorite YouTubers. Sarah has really good skin, so when I saw that she personally curated a ‘summer clear skin’ box with Wishtrend, I had to get it. She actually made a whole video about the products and why she chose them, you can watch it HERE

So now, here is what I thought about the products:

Klairs Supple Preparation Unscented Facial Toner

Originally, they put the ‘scented’ toner in the box by mistake, so I was sent the ‘unscented’ toner separately in the mail. I actually got it before I got the box, that’s how fast they were.

I really like this toner, it has a thicker consistency than most toner I’ve used, not quite a gel, but slightly gelly-ish water if you will. It doesn’t make my skin feel tight at all, a problem I sometimes have with toners with alcohol in them.

All around, this is a very good first step to my routine!

ByWishtrend Polyphenols in Propolis 15% Ampoule

This one I had to try for a few days before forming a final opinion on it. See, while it does great things for my skin, it also stays a little sticky on my face. Nothing a bit of primer and loose powder can’t fix, mind you, but still.

In the end, how good it works on my skin won me over and I just deal with a bit of stickiness. Be mindful that this is ‘Propolis’, a byproduct of honey, so if you are allergic to honey or bees, you might want to check with your doctor before using this! It’s also inherently non-vegan, if that matters to you at all.

Personally, my skin reacts well to honey products, so it really does work great.

I’m From Vitamin Tree Water Gel

The consistency is so nice! it’s a gel but it’s very hydrating. Perfect for the summer months. If and when it gets actually really warm, I’m thinking I’m gonna store that gel in the fridge, for extra soothingness.

Also, when used with the ampoule, it does stay sticky but used on its own it’s not. So do with that what you will!

It has a slight scent to it but it not overpowering and it’s quite pleasant. If your skin is extra sensitive, do try a small patch beforehand.

Klairs Midnight Blue Calming Cream 30ml

My favorite product in the whole box! This is a night cream, as it is richer than the other ones.

It does such a great job at calming my redness though! I wake up in the morning and my skin is very nice and unified, color wise.

It doesn’t smell like much and while it’s rich, it’s not too much for the summer. It might not be quite enough for the harsher months of winter in Canada, but I might try anyway just because I love it so much!

Klairs Soft Airy UV Essence SPF 50 PA ++++

As a very fair person, I wear sunscreen literally every day of my life.

This one is not only a high SPF, but it doesn’t leave a white residue at all. It’s also not sticky and did not break me out!

Most sunscreens make me break out for some reason, which sucks since I have to wear it every day if I don’t want to look 80 years old when I reach 35… Which I do not. This one is very nice and cheaper than most sunscreen I can usually use on my face! Talk about a win!

The box retails for $75USD, and the cost of each individual item would add to over $125USD so it’s quite a bit of saving. On top of that, you get 2 packs of those awesome Acne Patches (shown above) and a TON of samples. Including at least 10 samples of the blue calming cream, so… YAY! Need more than that?
